Tasks & responsibilities

• Cooking and preparing dishes and ingredients as per company specifications.
• Maintaining safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures during the kitchen operation.
• Ensuring high quality of dishes is maintained.
• Managing BOH and Cost of Goods.
• Stock rotation and stock ordering.
• Developing and reviewing the menus.
• Training staff as required by demonstrating techniques and advising on cooking procedures.
• Assisting in all sections of the kitchen when required during service to maintain a smooth and efficient workflow.

Qualifications & experience

• Have 3 years or above Japanese cuisine experience working in a high volume fast paced kitchen
• Previous experience in Japanese cuisine and/or sushi techniques preferred.
• Be flexible and reliable with availability to work a rotating roster including weekends and public holidays.
• Outstanding management skills.
• Good knowledge of managing BOH and Cost of Goods.
• Food Safety Supervisor Certificate.
• A positive approach to other team members.
• Have a great attitude and work ethic.
• Wok Cooking experience preferred.
